- 1 cup rice, uncooked
- 2 tablespoons cooking oil
- 1 small tomato, chopped
- 1/4 of a small onion, chopped or less than 1/2 tsp onion powder
- 4 cups hot water
- 4 tsp. Knorr Caldo de Tomate (Tomato Bouillon w/ Chicken Flavor)
Fry rice with oil in a large skillet on medium/high heat. Make sure the rice is evenly coated with oil to where it looks shiny. Be careful not to drench it in too much oil. If it is not coated enough, slowly add more oil. Add the tomato and chopped onion/onion powder. Stir the mixture until the rice is nice and toasted. It will have a golden brown color. Add 4 cups of hot water and wait until it starts to boil. When it starts to boil, add 4 tsp. of Knorr Caldo de Tomate into the mixure. (You can usually find this in the Mexican isles at most grocery stores.) Stir it well and then reduce the heat to medium, cover it, and let it cook for 10 minutes. Then reduce the heat to low and let it cook for another 10 minutes. Goes great with your favorite Mexican dish!
* You can add corn to the rice if you feel bold enough to experiment! It tastes really good actually.

This is the rice I grew up eating at home. I had to call my mom for her recipe. The thing about my mom is that she doesn't really have a set recipe. She tells me ballpark measurements like make sure the water covers the rice by an inch and so on. I'd decided I was going to get exact measurements of everything so that it will be easier for others (especially readers of this blog) to make this recipe. She's just made it so long it's second nature to her. It turned out absolutely delicious, and it almost made me cry because as soon as I tasted it, it brought back memories of home. It had been so long since I'd remembered eating her rice. That's what's hard about living so far from my parents; they still live in Texas while I'm up in Utah. After I had taken that bite, I immediately called my mom to tell her I missed her. I just wanted my mommy! I'm glad she understood because she said she also had the same feelings after she made her mother's recipes.
I wasn't sure I would find the Knorr Caldo de Tomate, but I was pretty impressed Wal-Mart had it in their Mexican food isle. It's tomato bouillon with chicken flavor. It's in a little jar in powder form. Here's a picture so it's easier to find.

I just came across your recipe when I was trying to find something with proportions. I too was given this recipe with estimates not measurements.
Question... do you really use 4 cups of water to one cup rice? That seems like quite a bit. For normal rice I ususally just do 2 cups water to one cup rice.
